Story:
Named for the city at the foot of Mount Etna, Catania celebrates Sicily’s volcanic energy and abundance. In this bar, Sabadì captures that contrast — fertile land meeting aromatic herbs and vivid fruit. The Modican method, where cacao is ground cold to preserve its texture and natural acidity, gives the bar its signature crystalline crunch and raw intensity. It’s a flavour snapshot of the island itself: bold, bright, and beautifully alive.

Let it melt slowly or pair with a glass of aromatic white wine — like Moscato or Malvasia — to bring out its fruity, herbal layers.

This chocolate is made in the traditional Modica method, that also dates back to Aztec methods of cacao - which means it is uniquely - and deliciously - grainy, rather than being smooth.

What is Modican Chocolate?

 

Modican chocolate is something truly special — officially recognised as a Traditional Agricultural Product of Italy (IGP)and protected by a Slow Food Presidium. It’s made using the traditional Modican method, a process that traces its roots back to Aztec techniques of cacao preparation.

Typical of Modica, Sicily, this chocolate is defined by its distinctive grainy texture and pure, expressive flavour. Crafted entirely by hand, it’s produced using the age-old “cold-working” process, where the temperature never exceeds 45°C. This gentle method preserves the cacao’s natural aromatics and the integrity of each ingredient.

The result is unmistakable — chocolate that’s bright, textural, and alive with flavour.

ABOUT SABADI CHOCOLATE

Based in Modica, Sicily, Sabadì is known for reimagining traditional Modican chocolate with organic ingredients and a playful, contemporary spirit. Founder Simone Sabaini honours the centuries-old cold-working method while pairing it with unexpected local flavours — from Sicilian citrus and wild herbs to carob and sea salt. The result is chocolate that feels both rooted in history and alive with modern Sicilian creativity: textured, aromatic, and unmistakably full of character.

TIMING: We don't believe anyone should wait too long for chocolate and aim to have your chocolate packaged and shipped within 1-2 business days. The sooner the better as far as we're concerned :)

SHIPPING TIMES: Standard shipping typically takes between 2-7 days. Exact time will depend on the courier, and whilst we can't guarantee any exact time as it's out of our hands, experience tells us it's more likely to be 2-3 days in most cases.

THE SNAILIEST SNAIL MAIL: As a heads up, sending to a PO Box, parcel locker or similar, will often be slower as we can't use courier services and have to rely on Australia Post, who can be pretty slow at times.
