Tasting Summary: from one of Tokyo's most inventive bean-to-bar makers, Artichoke Chocolate have harnessed exceptional Arriba Nacional cacao from Santo Domingo de los Tsáchilas - a province in Ecuador at the foot of the Andes, in the lowland northwest of the country, not far inland from the Pacific coast.
The result is a gentle but distinct flavour profile, that offers up nutty flavours of almond, followed by sweet undertones, a touch of spice and tropical fruit. All rounded up with a finish of burnt caramel.

Stories: Artichoke Chocolate opened in Kiyosumi-Shirakawa (Tokyo) in 2015, modelled on the small chocolate shops of European towns - and having visited in 2026 I'd say they are one of the most playful chocolate makers I've come across. In addition to their limited edition bars - small batch, once they're gone they're gone - they mould chocolate into sushi and roast chicken legs. If you're ever in that part of Tokyo, the shop is worth the trip regardless of what you leave with.
Fiamma Tip: The nutty almond and burnt caramel notes make this a great match for a Japanese whisky, a sherry-cask or lightly peated whisky. If you'd rather skip the alcohol, a roasted hojicha tea hits the same toasted, nutty register, for a true Tokyo pairing.

Why Is Tsáchila Cacao So Good?
Tsáchila cacao takes its name from Santo Domingo de los Tsáchilas, an Ecuadorian province at the foot of the Andes, home to the Tsáchila people and their long-standing cacao-growing tradition. Like Esmeraldas, it's Nacional cacao, but grown in volcanic, Andes-foothill soil rather than coastal lowland, and that terroir difference shows up directly in the cup.
Where Esmeraldas leans bright and fruit-forward, Tsáchila cacao is known for a warmer, nuttier register, toasted almond, tropical fruit and a floral lift, prized by chocolate makers for exactly that balance of depth and delicacy. It's part of why Nacional remains one of the most sought-after cacao genetics in the world, despite surviving a near-extinction event in the early 20th century.

THE SNAILIEST SNAIL MAIL: As a heads up, sending to a PO Box, parcel locker or similar, will often be slower as we can't use courier services and have to rely on Australia Post, who can be pretty slow at times.
